AFC Bournemouth
The latest recipe to try out from the AFC Bournemouth Hospitality and Events team is a Asian-inspired delight.
Ingredients
Makes one portion
- 1x Teaspoon tomato puree
- 2x Fresh chilli, cut in half and thinly sliced
- ¼ White cabbage, shredded
- ½ Carrot, cut lengthways
- 1x Spring onion, cut thinly lengthways
- 1oz Fresh ginger, grated
- 1x Garlic clove, crushed
- 200ml Coconut milk
- Slice of lime or lemon
- 1x Teaspoon of soy sauce
- Salt and pepper
- Sesame seed olive oil
Optional: You can also add chicken or prawns to this recipe
Method
- Pan-fry the tomato puree and fresh chilli in four teaspoons of sesame oil over a medium heat for one minute
- Add white cabbage and carrots then fry for a couple more minutes
- Add the chicken or prawns, if preferred, and fry until properly cooked
- Add spring onions, garlic, ginger, salt and pepper then cook for a couple more minutes
- Add the coconut milk (saving a little for drizzling at the end) and simmer for five minutes on a medium heat
- Once ready, pour into a warm bowl and top with a slice of lime or lemon
- Drizzle the remaining coconut milk with a little soy sauce and sesame seed oil over to dress the dish
