The latest recipe to try out from the AFC Bournemouth Hospitality and Events team is a Asian-inspired delight.

Ingredients

Makes one portion

  • 1x Teaspoon tomato puree
  • 2x Fresh chilli, cut in half and thinly sliced
  • ¼ White cabbage, shredded
  • ½ Carrot, cut lengthways
  • 1x Spring onion, cut thinly lengthways
  • 1oz Fresh ginger, grated
  • 1x Garlic clove, crushed
  • 200ml Coconut milk
  • Slice of lime or lemon
  • 1x Teaspoon of soy sauce
  • Salt and pepper
  • Sesame seed olive oil

Optional: You can also add chicken or prawns to this recipe

Method

  1. Pan-fry the tomato puree and fresh chilli in four teaspoons of sesame oil over a medium heat for one minute
  2. Add white cabbage and carrots then fry for a couple more minutes
  3. Add the chicken or prawns, if preferred, and fry until properly cooked
  4. Add spring onions, garlic, ginger, salt and pepper then cook for a couple more minutes
  5. Add the coconut milk (saving a little for drizzling at the end) and simmer for five minutes on a medium heat
  6. Once ready, pour into a warm bowl and top with a slice of lime or lemon
  7. Drizzle the remaining coconut milk with a little soy sauce and sesame seed oil over to dress the dish
