Club Recipe: Passionfruit Mojito

It's great way to cool down during the warm weather at a barbecue and all ingredients are available in good supermarkets and online.

Ingredients

• Fresh mint
• 1 x Passionfruit
• White rum (We use Bacardi)
• Passionfruit syrup (We use Monin)
• Passionfruit liqueur (We use Passoa)
• 3 x limes
• Crushed ice 
• Soda water 

Method 

1. Place 12 mint leaves into a large tumbler and mash slightly with a spoon.
2. Add the flesh and seeds from ½ a passionfruit into the glass.
3. Add 19ml (Approximately ¾ of a shot) of lime juice to the glass.
4. Add 12.5ml (Half a shot) of passionfruit syrup to the glass.
5. Add 37.5ml (1 ½  shots) of white rum to the glass.
6. Add 12.5ml of Passionfruit liqueur.
7. Add a large scoop of crushed ice and churn ingredients together with a spoon until well mixed.
8. Add another scoop of crushed ice and top with soda water.
9. Stir gently and garnish with a leafy sprig of mint, ¼ of a passionfruit and a straw.
