Tomato Salsa
Instructions
- Extra virgin olive oil
- 19g diced tomatoes
- 33g diced red onion
- Spring onion – A couple of sticks
- Finely chopped herb coriander
- Lime juice – A dash
- Salt – To taste
- Pepper - To taste
- Cider vinegar – A drizzle
Method
- Mix all the ingredients together.
- Season with salt and pepper to taste.
- Add more lime juice and olive oil to the mix if required.
Falafel
Instructions
- 500g chickpeas
- 20g diced red onion
- 2 cloves of garlic
- 1 tsp ground cumin
- 3/4 tsp ground coriander
- Flat Leaf Parsley – A small bunch
- 1/2 tsp rose harissa paste
- 1 tsp extra virgin olive oil
- 12g plain flour
Method
- Firstly, drain the chickpeas and pat them dry with kitchen paper.
- Then pour them into a food processor together with the onion, garlic, parsley, cumin, coriander, harissa paste, chilli powder, plain flour and a little salt.
- Blend it all together until fairly smooth.
- Split the mix into ten equal piles.
- Roll each one in your hands until you get a nice ball shape.
- Heat the olive oil in a non-stick frying pan, add the falafel balls then quickly fry for approximately three minutes until crispy.
