Recipe: Falafel and tomato salsa

Our hospitality and events team have produced a spicy falafel and tomato salsa dish, with full details at home. 

Tomato Salsa

Instructions 

  • Extra virgin olive oil 
  • 19g diced tomatoes 
  • 33g diced red onion 
  • Spring onion – A couple of sticks
  • Finely chopped herb coriander 
  • Lime juice – A dash
  • Salt – To taste
  • Pepper - To taste
  • Cider vinegar – A drizzle

Method 

  1. Mix all the ingredients together. 
  2. Season with salt and pepper to taste. 
  3. Add more lime juice and olive oil to the mix if required. 

Falafel 

Instructions 

  • 500g chickpeas
  • 20g diced red onion 
  • 2 cloves of garlic  
  • 1 tsp ground cumin 
  • 3/4 tsp ground coriander 
  • Flat Leaf Parsley – A small bunch
  • 1/2 tsp rose harissa paste 
  • 1 tsp extra virgin olive oil 
  • 12g plain flour 

Method 

  1. Firstly, drain the chickpeas and pat them dry with kitchen paper. 
  2. Then pour them into a food processor together with the onion, garlic, parsley, cumin, coriander, harissa paste, chilli powder, plain flour and a little salt. 
  3. Blend it all together until fairly smooth. 
  4. Split the mix into ten equal piles. 
  5. Roll each one in your hands until you get a nice ball shape. 
  6. Heat the olive oil in a non-stick frying pan, add the falafel balls then quickly fry for approximately three minutes until crispy.
