Junior Cherries Recipe: Smores Bar

Our next Junior Cherries recipe is the perfect treat for Bonfire Night!

Ingredients (makes approx. 16)

Crumbly oat base

  • Shallow baking tin 
  • Grease proof paper 
  • Mixing bowl 
  • 120g digestive biscuits 
  • 270g rolled oats 
  • 3 tbsp plain flour 
  • 100g light brown sugar
  • 160g butter (melted) 
  • ½ tsp ground cinnamon
  • ¼ tsp table salt 
  • 3 tbsp water 

Chocolate Ganache

  • Heatproof bowl 
  • 200g Milk Chocolate 
  • 180ml Double Cream 
  • 1 tbsp Caster Sugar 

Topping

  • 40 Marshmallows 

Method (Adults assistance required) 

  1. Line the shallow baking tin with grease proof paper and preheat the oven to 170°C. 
  2. Crush up the digestive biscuits to an oat sized consistency.
  3. Place all the ingredients for the oat base in a bowl and blend well. These are the digestive biscuits, rolled oats, plain flour, melted butter, salt, caster sugar and cinnamon.
  4. You should have a clumpy mixture. If needed add up to three tablespoons of water gradually to make it stickier.
  5. Spoon your mixture into your oven dish and press down on it firmly to make a thick crust that is evenly distributed. It should be about 1cm depth.
  6. Prick with a fork and bake on the middle shelf of the oven for 10-15 minutes or until the edges are golden. 
  7. Remove and let the base cool completely. This step is important to stop the base from being too crumbly.
  8. Prepare the chocolate ganache. In a heatproof bowl, place the milk chocolate in pieces, the double cream and the sugar. Set the bowl over a saucepan of boiling water. Keep stirring until the milk chocolate is all melted. 
  9. Pour the chocolate ganache over the crumble base and spread it out evenly. Add the marshmallows on top by standing them upright over the chocolate layer.
  10. Place the dish in the oven with a top heat (or grill) for a few minutes until the marshmallows are browned. Keep a close eye on it as it cooks as the marshmallows can burn quickly.
  11. Remove and cut into bars or squares, ready to serve.
