Club Recipe: Passion Fruit Pressé

A refreshing non-alcoholic cocktail that is perfect for those doing Dry January.

All the ingredients are available in large supermarkets.

Equipment

  • Tumbler glass
  • Cocktail shaker & strainer (if you don’t have a cocktail shaker and strainer, a large Kilner-style jar and sieve will work) 

Ingredients 

  • 3 passionfruit
  • 50ml cloudy apple juice
  • 12.5ml sugar syrup
  • Sparkling elderflower
  • Ice cubes
  • Fresh mint 

Method

  1. Add the flesh and seeds of two passion fruits to a cocktail shaker or large kilner style jar.
  2. Add 50ml of cloudy apple juice to your shaker. 
  3. Add 12.5ml of sugar syrup / gomme to your shaker (we use Monin). 
  4. Shake the first three ingredients with ice cubes. 
  5. Fine strain through a sieve into a whisky tumbler filled with ice cubes. (This should catch the seeds and pulp from the passionfruit). 
  6. Top with Sparkling elderflower
  7. Stir the drink gently to mix.
  8. Garnish with a quarter of a passionfruit and a sprig of mint.
