Club Recipe: Carrot & Red Onion Bhaji Vegan Burger

Our latest recipe from the AFC Bournemouth Events & Hospitality team will really get your juices flowing - try this vegan burger delight!

Ingredients - To make one portion

  • ½ Red Onion
  • ½ Carrot (cut into long thin matchsticks)
  • 1x Spring Onions
  • 2 x Egg cups of gram chickpea flour
  • ½ x Egg cup of water
  • 1 tsp curry powder
  • 2 Lettuce leaves
  • 1 tsp mango chutney
  • 1 x Vegan bun
  • Vegetable oil
  • Salt and pepper

Method

  1. Turn on your deep fat fryer to pre-heat it or heat about half a saucepan of vegetable oil over a medium heat. Alternatively, heat enough oil in a deep frying pan for shallow frying
  2. Combine the red onion, carrot, spring onion, gram flour, water and curry powder in a bowl and season with salt and pepper
  3. Using a tablespoon, dollop the mixture into the hot oil and fry the bhaji for about three to four minutes until golden brown (if you are shallow frying the mix then do the same on each side until golden brown)
  4. Remove and drain onto kitchen paper
  5.  Assemble the Bhaji Burger with the lettuce and the mango chutney in the vegan bun, then serve!
