Club Recipe: Breakfast Bagel

Treat your dad this Father's Day with breakfast in bed!

Our delicious bagels are perfect for the mornings and can even be made gluten free! 

Ingredients

  • 2 bagels of choice (we used seeded)
  • ½ avocado (pitted & peeled)
  • Dried chilli flakes 
  • Lime juice 
  • 2 eggs
  • Dash of milk
  • Salt & pepper
  • Butter
  • 4 slices of bacon
  • Cooking oil

If you don’t feel like avocado then why not add sliced cheese instead!

Method

  1. Firstly, start by preparing your avocado. You will need to cut this into pieces and add to a bowl before mashing. You can add a dash of lime juice and dried chilli flakes for a bit of extra flavour! Then place this to the side for a moment. 
  2. You will need to place a frying pan on medium heat and a dash of oil for the bacon. You will need to cook this for approximately ten minutes, making sure you flip the bacon half-way (or cooked to your preference). 
  3. Next it’s time to prepare the eggs. You can either add the mixture to a jug or straight into the pan. Break the eggs and discard the shells, add a dash of milk, a tablespoon of butter and some salt and pepper to season, then beat together. 
  4. You will then need to cook this on a low heat making sure you stir the mix continuously so it doesn’t stick to the pan. 
  5. Whilst this is cooking, you can cut the bagels in half and pop them in the toaster for approximately two minutes.
  6. Once the bagel is cooked, remove and place on a plate. You will then need to butter each slice and add the avocado to once slice of each bagel. 
  7. Once the egg is cooked, you can then add this on top of the avocado followed by the slices of bacon. 
  8. The finish simply add the other slice of bagel to the top and serve!

You could also use gluten free bagels!
