Club Recipe: Aubergine Pizza

Take a look at our latest club recipe, Aubergine Pizza.

This one is perfect for vegetarians! 

Ingredients: 

  • 2 medium aubergines (cut into round slices and discard the ends)
  • 1 large onion (finely chopped)
  • 1 large garlic clove (crushed)
  • Olive oil
  • 1 x 400g tin of chopped tomatoes
  • 2 tsp of tomato purée
  • Cheese (grated)
  • Salt and pepper
  • A bunch of basil (roughly chopped) 

Method: 

  • Firstly, start by creating the sauce. You will need to cook the onion and garlic in one tablespoon of oil for a few minutes until soft but not coloured. 
  • Then add the tomatoes and tomato purée. 
  • This will need to simmer until it becomes a thick chunky sauce. 
  • Add some salt and pepper to taste. 
  • While the sauce is simmering, pre-heat the grill to high. 
  • Add the aubergine to an oven proof tray and brush them with olive oil. 
  • Season with some salt and pepper, then grill them for a few minutes on each side until tender. 
  • Once cooked, remove from the oven and spoon the sauce onto the slices. Add as little or as much sauce as you prefer - we even added some extra diced tomatoes! 
  • Then sprinkle on some basil and grated cheese and place back under the grill for a couple of minutes to allow the cheese to melt. 
  • Then finally serve!

 

Extra tips

You could add a few tablespoons of passata to the tomato sauce before you reduce it for an even richer tomato sauce. Virtually any flavour can be sprinkled over the top of the pizzas before grilling, so why not get creative with some other flavours!
